Toronja Amaro Highball

Amaro and grapefruit belong together and have for a long time. The bitterness in an Italian amaro is herbal and rooty; the bitterness in grapefruit is bright and pithy. Put them in the same glass and each one makes the other more legible.

There is no technique here at all. Ice, an ounce and a half of amaro, a squeeze of lime, and Toronja to the top. It takes three minutes because you are waiting for the glass to get cold, not because you are doing anything.

The Recipe

Makes 1 · 3 minutes

Ingredients

  • Ice
  • 1.5 oz amaro (such as Montenegro or Averna)
  • 0.5 oz fresh lime juice
  • 4 oz Tehuacan Brillante Toronja
  • 1 lime wedge for garnish

Method

  1. Fill a tall Collins glass to the brim with fresh ice.
  2. Pour the amaro directly over the ice.
  3. Add the fresh lime juice.
  4. Top the glass with Tehuacan Brillante Toronja.
  5. Stir gently once to combine without losing the carbonation, then drop in the lime wedge.

Notes

Montenegro leans floral and orange-peel; Averna is darker, with more caramel and cola. Both work. Montenegro makes a lighter drink for a warm evening, Averna a better one for after dinner.

This is the drink to make when someone drops by unannounced and you want to look like you tried. Nobody needs to know it was three pours.
