Tehuacan Sparkling Carrot Ginger Cooler
Carrot juice belongs in a glass with ice in it. Ginger and lemon make the case.
Carrot juice has an image problem. It gets served warm, in small glasses, as though it were medicine. Chilled properly, cut with lemon, and given a sharp ginger edge, it is one of the better savory-sweet bases you can build a drink on.
This is a zero proof build with real structure: shaken hard to aerate the carrot juice, strained onto fresh ice, then lengthened with sparkling mineral water so it drinks light rather than thick.
The Recipe

Ingredients
- 2 oz fresh carrot juice
- 0.5 oz fresh lemon juice
- 0.5 oz ginger syrup
- Ice cubes
- 4 oz Tehuacan Brillante sparkling mineral water
- 1 carrot ribbon (for garnish)
Method
- Add the fresh carrot juice, lemon juice, and ginger syrup to a cocktail shaker.
- Fill the shaker halfway with ice and shake vigorously for ten seconds.
- Strain the mixture into a tall, plain smooth glass filled with fresh ice.
- Top with Tehuacan Brillante sparkling mineral water.
- Stir gently to combine and garnish by slipping a fresh carrot ribbon down the inside of the glass.
Notes
Fresh carrot juice separates fast. If you juiced it more than an hour ago, shake it on its own before you build, or the drink will look muddy at the bottom of the glass.
Make the ginger syrup hotter than you think you need. Once the carrot sweetness and the carbonation are in, a timid ginger syrup vanishes completely.
The carrot ribbon garnish is easier with a wide peeler and a fat carrot. Slip it down the inside of the glass before the top-up.
