Pineapple Rosemary Pitcher Punch
Pineapple and rosemary, batched for six to eight, with the herb in the syrup rather than the glass.
Rosemary is a difficult herb in a drink. Muddled, it turns turpentine-sharp almost immediately. Infused into a simple syrup, it becomes piney and warm and behaves itself completely.
That syrup against three cups of fresh pineapple juice is the entire concept. Sweet tropical fruit, resinous herb, a cup of lemon juice for acid, and four bottles of mineral water added at the last second to keep every glass lively.
The Recipe
Serves 6 to 8 · 10 minutes
Ingredients
- 3 cups fresh pineapple juice
- 1 cup fresh lemon juice
- 1/2 cup rosemary simple syrup
- 1 cup fresh pineapple chunks
- 4 fresh rosemary sprigs
- 4 12 fl oz bottles Tehuacan Brillante sparkling mineral water, chilled
Method
- Fill a large plain glass pitcher halfway with large ice cubes.
- Pour in the fresh pineapple juice, lemon juice, and rosemary simple syrup.
- Stir gently with a long spoon to combine the juices and syrup.
- Drop the fresh pineapple chunks and rosemary sprigs into the pitcher for garnish.
- Just before serving, slowly pour in the chilled Tehuacan Brillante sparkling mineral water last so the bubbles stay lively.
- Give the pitcher one final gentle stir and serve in plain smooth highball glasses over ice.
Notes
For the syrup, steep three or four sprigs in a cup of hot simple syrup for twenty minutes and remove them. Longer is not better; rosemary keeps giving until it is unpleasant.
The sprigs in the pitcher are garnish and aroma. They are not there to infuse, so do not leave the punch sitting on them for hours.
Serve in highballs over fresh ice rather than pouring from the pitcher into warm glasses. The ice in the pitcher is for chilling, not for serving.
