Guayaba Lime Cooler
Pink guava purée and a full ounce of lime, built in the glass as a homemade soda.
This is the same fruit as the Guava Brisa put to a different purpose. Purée instead of nectar makes a denser, more textural drink, and a full ounce of lime against it turns the whole thing sharply refreshing rather than tropical.
It is a five-minute build with no shaker: purée, lime, and simple syrup stirred in the glass, ice, then sparkling mineral water poured over to lift the fruit off the bottom.
The Recipe
Makes 1 · 5 minutes
Ingredients
- 2 oz pink guava puree
- 1 oz fresh lime juice
- 1/2 oz simple syrup
- Ice cubes
- 4 to 5 oz Tehuacan Brillante sparkling mineral water
- 1 fresh mint sprig
- 1 lime wheel
Method
- Fill a plain highball glass to the top with ice cubes.
- Add the pink guava puree, fresh lime juice, and simple syrup to the glass.
- Stir briefly to mix the fruit base.
- Pour in the Tehuacan Brillante sparkling mineral water.
- Stir gently one more time to lift the guava mixture through the sparkling water.
- Garnish with the fresh mint sprig and lime wheel before serving.
Notes
Pink guava purée is sold frozen in most Latin markets and it is far better than anything you will make from underripe fruit in a blender.
Stir twice — once to mix the fruit base, once gently after the top-up. Purée is heavy and one stir will not move it.
Mint and a lime wheel are both doing aromatic work. Slap the mint between your palms before it goes in the glass.
