# Sparkling Citrus Cold Brew

Sparkling coffee has been on café menus for a decade and it still surprises people at home. The logic is straightforward: cold brew is low in acid and high in sweetness, and carbonation supplies the brightness that a hot cup gets from its acidity.

Two dashes of orange bitters are what make this taste designed rather than improvised. They pick up the citrus oils in the Lima and bridge them to the coffee, and the wide strip of expressed orange peel finishes the same idea in the aroma.

## The Recipe

**Makes 1 · 5 minutes**

### Ingredients

- 2 oz cold brew coffee concentrate
- 1/2 oz light agave nectar
- 2 dashes orange bitters
- Ice
- 4 oz Tehuacan Brillante Lima
- 1 wide strip of fresh orange peel

### Method

1. Pour the cold brew coffee, agave nectar, and orange bitters into a collins glass.
2. Stir well until the agave is fully dissolved.
3. Fill the glass with ice cubes.
4. Top with Tehuacan Brillante Lima.
5. Stir gently once to mix the coffee and mineral water.
6. Twist the orange peel over the glass to express the oils, then drop it in.

### Notes

Use concentrate, not ready-to-drink cold brew. Two ounces of concentrate is the right strength under four ounces of mineral water; bottled cold brew is already diluted and will disappear.

Dissolve the agave into the coffee before the ice goes in. Syrup will not incorporate into a cold carbonated drink no matter how long you stir.

A weekend morning drink. Serve it with something rich and eggy, or with pan dulce and nothing else.
