# Prickly Pear Ginger Soda

Prickly pear — tuna, in Spanish — is one of the great underused juices. The flavor is mild, somewhere between watermelon and bubblegum, and the color is an unreasonable magenta that no other fruit produces.

Because the fruit is gentle, this build leans on ginger and lime for structure and a pinch of sea salt for depth. Stirred cold, strained, then lengthened with sparkling mineral water so the color stays bright rather than muddy.

## The Recipe

**Makes 1 · 5 minutes**

### Ingredients

- 1 1/2 oz prickly pear juice
- 1 oz ginger syrup
- 1 oz fresh lime juice
- 1 pinch sea salt
- Ice cubes
- 4 oz Tehuacan Brillante sparkling mineral water
- 1 lime wheel for garnish

### Method

1. Fill a mixing glass halfway with ice cubes, then pour in the prickly pear juice, ginger syrup, lime juice, and sea salt.
2. Stir the mixture steadily until it is thoroughly chilled.
3. Strain the chilled liquid into a plain smooth tumbler filled with fresh ice.
4. Top with Tehuacan Brillante sparkling mineral water.
5. Gently stir one time to integrate the sparkling water without losing the carbonation.
6. Garnish by resting a fresh lime wheel on the edge of the glass.

### Notes

The pinch of salt is not a garnish. Salt suppresses bitterness and sharpens perceived sweetness, and without it this drink tastes vaguely flat no matter how much lime you add.

Stir rather than shake. Shaking aerates the prickly pear juice and dulls that magenta down to a cloudy pink.

Bottled prickly pear juice is fine and widely available. Fresh tunas are better if you can find them, but they need peeling with gloves and straining through cloth.
