# Peach and Red Wine Clerico

Clericó is what much of South America drinks instead of sangría — lighter, more fruit-forward, and less reliant on brandy and sugar to carry it. It rewards good fruit and forgives cheap wine, which is a useful combination in a punch.

The hour in the refrigerator is not optional. Diced peaches and orange half-moons need that time to give up their juice into the wine, and the difference between a punch poured immediately and one that sat for an hour is not subtle.

## The Recipe

**Serves 6 to 8 · 10 minutes, plus chilling time**

### Ingredients

- 1 bottle (750 mL) dry red wine, chilled
- 2 cups peach nectar, chilled
- 1 cup fresh orange juice
- 2 peaches, pitted and diced
- 1 large orange, cut into half moons
- 2 bottles (12 oz each) Tehuacan Brillante sparkling mineral water, chilled

### Method

1. Add the diced peaches and orange slices to a large glass pitcher.
2. Pour in the chilled red wine, peach nectar, and fresh orange juice.
3. Stir gently with a long spoon to combine the liquids and fruit.
4. Place the pitcher in the refrigerator for at least one hour to let the flavors blend.
5. Just before serving, top the pitcher with the Tehuacan Brillante sparkling mineral water so it stays lively.
6. Pour into plain smooth glasses over ice, making sure to scoop some fruit into each glass.

### Notes

Use a dry red with low tannin — a young Garnacha, a Beaujolais, anything you would drink slightly chilled. An oaky, tannic wine turns astringent once the fruit sugar and the bubbles hit it.

Two bottles of mineral water go in at the very end, and only at the very end. Everything else can sit.

Scoop fruit into every glass. The macerated peach at the bottom of the pitcher is the best part of the drink and it should not all end up with whoever pours last.
