You do not replace your people. You find the ones who feel like them.

Tonight Frida stays after the doors lock at the restaurant, the way you only get to when a city has decided to keep you. A kitchen after close is its own country: shared plates on the steel counter, aprons half untied, easy laughter, everyone finally off their feet.

Then the small thing that means everything. A new friend reaches across the counter for the Tehuacán without asking what it is. No explanation needed, no pitch, just a hand around a cold glass bottle, passed along the way it gets passed at home. In Puebla the water has moved hand to hand around tables since before anyone at this counter was born, in a family business that has bottled it since 1983.

Home is a table that lets you sit down.
