# Jasmine Aloe Sparkling Tea

Jasmine is a difficult flavor to serve cold. Brew the tea too strong and the floral note turns soapy; brew it too weak and it disappears under anything you add to it. The fix is not a better tea. The fix is giving the tea room.

That is the whole idea behind this build. Three ounces of chilled jasmine green tea, a little aloe for body, a half ounce of agave to round the edges, and then Lima poured over the top to stretch all of it into something you can drink for an hour. The carbonation does the work that a stronger brew would ruin.

## The Recipe

**Makes 1 · 5 minutes**

### Ingredients

- 3 oz brewed jasmine green tea, chilled
- 1.5 oz aloe vera juice
- 0.5 oz agave nectar
- 3 oz Tehuacan Brillante Lima
- 1 long cucumber ribbon
- Ice

### Method

1. Line the inside of a tall, plain smooth unmarked highball glass with the cucumber ribbon.
2. Fill the glass with ice to hold the ribbon in place.
3. Pour the chilled jasmine tea, aloe vera juice, and agave nectar over the ice.
4. Stir gently to combine the base ingredients.
5. Top with Tehuacan Brillante Lima and serve immediately.

### Notes

The cucumber ribbon is not decoration. Line the glass before the ice goes in and it presses against the wall, cools with the drink, and reads as a green vertical line through the whole thing. Peel it with a vegetable peeler down the long side of the cucumber, and take the widest ribbon you get.

Serve it alongside anything with lime and salt in it. Ceviche, a plate of sliced jicama with chile, cold shrimp. The aloe gives the drink a soft texture that sits well next to sharp food.
