# Jamaica Pomegranate Highball

Agua de jamaica is a fixture in Mexican homes and it is already close to a finished drink: tart, floral, and startlingly red. Adding pomegranate juice deepens the color and brings a tannic grip that hibiscus alone does not have.

Everything goes into the glass in order, gets a gentle stir, and is topped with sparkling mineral water. Five minutes, assuming you brewed the jamaica ahead.

## The Recipe

**Makes 1 · 5 minutes**

### Ingredients

- Ice
- 2 oz strong brewed jamaica, cooled
- 1 oz pomegranate juice
- 0.5 oz fresh lime juice
- 0.5 oz agave nectar
- 4 oz Tehuacan Brillante sparkling mineral water
- 1 tablespoon pomegranate arils

### Method

1. Fill a tall, plain highball glass with ice.
2. Pour in the cooled jamaica, pomegranate juice, lime juice, and agave nectar.
3. Stir gently to combine the juices and dissolve the agave.
4. Top with Tehuacan Brillante sparkling mineral water.
5. Garnish with pomegranate arils and serve immediately.

### Notes

Brew the hibiscus strong and let it cool completely. Diluted jamaica makes a pretty drink that tastes of nothing, and there are five ounces of ice and water going in on top of it.

Half an ounce of agave is a starting point. Hibiscus acidity swings widely depending on the flowers, so taste the base before you top it up.

The arils are worth the trouble. They sink, they catch light through the red liquid, and they are good to eat at the end.
