# Earl Grey Toronja Cooler

Earl Grey is grapefruit's natural ally. The bergamot oil that scents the tea is a citrus oil, closely related to what you smell when you cut into a grapefruit, so pairing the two is less a contrast than an amplification.

The build layers deliberately: syrup first, Toronja next, then the cold tea poured slowly over the top so it sits above the sparkling water in a visible band. It will hold for a minute or two, which is exactly long enough to look at.

## The Recipe

**Makes 1 · 5 minutes**

### Ingredients

- Ice cubes
- 1 oz vanilla syrup
- 3 oz cold brewed Earl Grey tea, unsweetened
- 4 oz Tehuacan Brillante Toronja, chilled
- 1 fresh grapefruit wheel
- 1 fresh mint sprig

### Method

1. Fill a tall, plain smooth unmarked highball glass with ice cubes.
2. Pour the vanilla syrup over the ice.
3. Add the chilled Tehuacan Brillante Toronja to the glass.
4. Slowly pour the cold brewed Earl Grey tea over the sparkling water to create a slight layered effect.
5. Stir gently right before drinking to combine the syrup, sparkling water, and tea.
6. Garnish the rim with a fresh grapefruit wheel and drop in a sprig of mint.

### Notes

Cold brew the tea. Steep the leaves in cold water in the refrigerator overnight rather than brewing hot and chilling — hot brewing pulls tannin, and tannin plus carbonation tastes chalky.

Stir it before you drink it. The layering is for the eye, and the drink is unbalanced until you pull it together with a spoon.

This is a brunch drink. Serve it with eggs, with pan dulce, with anything you would otherwise pair with coffee.
