# Blood Orange Mezcal Spritz

Mezcal in a spritz is a balancing act. Espadín brings smoke and a vegetal edge that can bully everything else in the glass, and most spritz formats are too delicate to take it. Blood orange is one of the few juices with enough character to answer back.

The Italian bitter aperitif is what ties them together. It sits between the smoke and the fruit, picking up the citrus on one side and the earthiness on the other, and the sparkling mineral water lengthens the whole thing into something balanced rather than loud.

## The Recipe

**Makes 1 · 5 minutes**

### Ingredients

- 1.5 oz espadin mezcal
- 0.75 oz Italian bitter aperitif
- 1 oz fresh blood orange juice
- 0.5 oz fresh lime juice
- 3 oz Tehuacan Brillante sparkling mineral water, chilled
- Ice cubes
- 1 blood orange wheel, for garnish

### Method

1. Combine the mezcal, bitter aperitif, blood orange juice, and lime juice in a cocktail shaker.
2. Add a small handful of ice and shake gently for just a few seconds to chill the ingredients.
3. Strain the mixture into a plain, smooth balloon glass filled with fresh ice.
4. Top with chilled Tehuacan Brillante sparkling mineral water.
5. Stir gently once to incorporate the liquids without losing the tight carbonation.
6. Garnish with a fresh blood orange wheel tucked down into the ice.

### Notes

Shake gently and briefly — a few seconds, with a small handful of ice. You want the base cold, not diluted. Over-shaking a mezcal drink knocks the smoke flat.

Blood oranges are a winter fruit. Out of season, use a regular orange and add a quarter ounce of fresh lime to make up the lost acidity, or reach for a good bottled blood orange juice.

Serve with grilled food. Anything that has seen char — carne asada, blistered scallions, a charred salsa — meets the mezcal on its own terms.
