# Blackberry Anise Sparkling Cooler

Blackberry and anise is an old pairing from the pastry side of the kitchen, where the licorice note is used to make dark fruit taste darker. It transfers to a glass almost unchanged.

The one non-negotiable step is straining. Blackberry seeds are unpleasant to drink around, and a fine mesh sieve between the mixing glass and the serving glass takes ten seconds. Skip it and the drink is ruined by its own fruit.

## The Recipe

**Makes 1 drink · 10 minutes**

### Ingredients

- 1/4 cup fresh blackberries
- 1/2 oz star anise simple syrup
- 1/2 oz fresh lime juice
- Ice
- 4 oz Tehuacan Brillante sparkling mineral water
- 1 whole star anise, for garnish
- 1 fresh blackberry, for garnish

### Method

1. In a sturdy mixing glass, thoroughly muddle the fresh blackberries with the star anise simple syrup.
2. Pour in the fresh lime juice and stir briefly to combine.
3. Strain the blackberry mixture through a fine mesh sieve into a plain, smooth unmarked highball glass to remove the seeds.
4. Fill the highball glass with ice cubes.
5. Top with Tehuacan Brillante sparkling mineral water and stir gently to lift the syrup from the bottom.
6. Garnish with a single whole star anise and a fresh blackberry.

### Notes

To make star anise syrup, drop four whole pods into a cup of hot simple syrup and leave it to cool. Pull the pods out once it tastes of anise — usually twenty minutes. Left overnight it turns bitter and medicinal.

Muddle firmly but do not pulverize. You want the juice out of the berries, not the pith broken up into the liquid.

This is the rare soda that works with cheese. A blue or a hard aged sheep's milk holds up to the dark fruit.
